Pairings
Pairing wine with wild game can be an extremely rewarding way to celebrate your successful hunt. The Woodsman choose this Cab Sav specifically for the everyday hunter because it goes extremely well with many wild game. It compliments meat such as deer, turkey, and wild boar. For best results add this blackberry sauce in conjunction with any of these meats. Bring a little out on your hunt or fix it up out in the field, cook up a slice of fresh meat over an open flame, apply the sauce generously and pop the top to the wine. Don’t worry about pouring the wine into a glass, a woodsman prefers to drink from the bottle in this situation.
Recipe
THE WOODSMAN’S WILD BLACKBERRY SAUCE
-1 cup of wild blackberries (huckleberries or elderberry or thimbleberry substitutes)
-2 juniper tree berries (4 creeping juniper berries)
-1 tablespoon of honey
-2 tablespoons of apple cider vinegar
-1 small sprig of rosemary
Directions
Crush all berries in a bowl thoroughly adding apple cider vinegar and rosemary. Transfer to a saucepan over medium heat and continue to crush and mix while heating. After a few minutes use low heat on the pan and simmer, stirring occasionally for 15 minutes. Remove from heat, add honey, mix well while still hot. Pour over game meat or use as a dipping sauce. Enjoy!

Fantastic cab sauv, and the description is spot on. Not crazy dry, but not too sweet. The Goldie locks of reds, it’s just right. Pair it with a steak or wild game and you are going to have a good night. Also pairs great with a nice mild cigar.
